I have a 2009 Rhino 700 EFI I had bought used about 7 years ago and has served me well.

But now I am having problems keeping it running.

It starts fine when I turn the ignition key but then when I release it the engine stops. If I keep the key engaged, it stays running and can even throttle up.

I have replaced the ignition switch and relays and still the issue persists.

Could I have a loose wire or vacuum hose perhaps?

I would troubleshoot but do not have access to a service manual and Yamaha isn't printing any.

Don't know how helpful this is but in my previous life (as a Ford technician) this symptom would mean that the ignition resistor was bad. The resistor is by-passed when the key is in the start position but when the key is returned to the "run" position current would then flow to the coil through the resistor. I don't even know if that system is still employed anymore but kinda sounds something like that the way you're describing it.
