I just bought a 2004 Rhino 660 and it runs fairly well for its age. The only issue I’m having with it is that it skips (sputters) at top end speed. I saw a YouTube video where a guy suggested replacing the rev sensor. I did that, but it’s still skipping. It almost sounds like it’s not getting gas. If I let off of the gas pedal, it drives fine (very smooth). I’m hoping someone has had a similar problem and can help me resolve the issue.

Yep, you're hitting the rev limiter. If everything else is in good shape this should happen at about 40 mph. If it hits the limiter in the mid 30's or lower, you'll need to service your sheave. There are aftermarket cdi units that will remove the rev limiter.
